Grilled Brie, Chocolate and Roasted Strawberry Sandwich

Looking for something a little unusual to serve at your next brunch? This recipe might be your ticket. Brunch has always been the meal that blends savory and sweet and this has you covered there. Cheese, roasted strawberries and dark chocolate come together on sliced brioche bread and are grilled to oozy gooey perfection.


Let’s talk about the cheese for a second. If you can find it in the store, I would actually recommend a close cousin to brie called Fromage d'Affinois. It is creamier and doesn’t have quite the earthy taste of brie and I believe it pairs a bit better. I found some at Kroger, so this shouldn’t be too challenging of a task. But if you can’t find it, brie will work just fine.


What you’ll need:

Ingredients for Recipe

  • 4 slices of Brioche Bread

  • 6 large strawberries sliced 1/4-inch thick

  • 1 Tablespoon of Honey

  • Pinch of sea salt

  • 2 Teaspoons of Grand Marnier (optional)

  • 3 ounces of Fromage d'Affinois or Brie cheese – sliced into 1/4-inch slices

  • 2 ounces of dark chocolate, roughly chopped

  • Melted Butter to brush on the bread

Equipment

  • Mixing Bowl

  • Lightly greased baking dish (8x8 should do)

  • Skillet or Griddle


Roast The Strawberries

  • Start by tossing the strawberries in the honey (you may have to warm the honey a bit first) and add a pinch of sea salt

  • Spread out on baking sheet and put into a 350-degree oven

  • Roast for 40 minutes, tossing halfway through

  • As soon as you pull from oven, sprinkle with Grand Mariner. The heat from the strawberries should evaporate most of the alcohol.


Assemble The Sandwiches

  • Butter what will be the outside side of each slice of bread (the side touching the skillet)

  • Evenly divide the fillings between the two sandwiches and layer it in the order of cheese, chocolate and strawberries.

  • Place on a griddle or skillet pre-heated to medium-high

  • It is important to grill with the cheese layer at the bottom first. You want to give it the most time with the heat to ensure it melts.

  • After 2-3 minutes, carefully check on the underside with a spatula to see if bread has browned. Let it cook to your desired level of browning and then flip.

  • Repeat the process. If the it looks like the cheese and chocolate isn’t fully melting, you can place a cover on the skillet for a minute or two to retain the heat and help the process along.

  • Remove from the skillet, cut in half or as desired, and enjoy!
